## Wine making process

The Penley Project Merlot 2023 is crafted using a multi-faceted approach. A portion of the grapes undergoes carbonic maceration, while another third is fermented with whole clusters. The final third is fermented conventionally in open vessels. These distinct methods are employed to manage fruit expression, floral notes, and tannin development. The grapes are sourced from three vineyards in northern Coonawarra, each contributing to the final blend. Penley Estate is certified by Sustainable Winegrowing Australia.
