## About this wine

Celler de Capçanes, situated in southern Montsant, Catalonia, was founded as a wine cooperative in 1933. In 1995, the winery made history when it agreed to produce certified Kosher wine for the Jewish community of Barcelona—becoming the first winery in modern Spain to produce premium Kosher wine. Peraj Petita was created as an approachable, fruit-driven companion to their flagship Kosher red cuvée, Peraj Ha'abib, showcasing the unique Montsant terroir of steep terraced vineyards.

## Interesting facts

## Food pairing

The wine's vibrant acidity, soft tannins, and medium weight make it versatile with light meats, roasted poultry, and savory rice dishes without overpowering their subtle flavors.

## Wine making process

Grapes are hand-harvested from vines aged 10 to 50 years growing at elevations between 180 and 450 meters on clay, granite, and slate soils. Vinification is carried out under strict Orthodox Jewish Law (certified Kosher Lo Mevushal and Le Pessaj). Temperature-controlled alcoholic fermentation occurs in stainless steel tanks at 24–28°C, followed by malolactic fermentation. To preserve vibrant fruit expression, 85% is aged in stainless steel vats on the lees for 5 months, while 15% matures in oak barrels for up to 10 months prior to blending.
