## About this wine

Celler de Capçanes, located in the Montsant region of Catalonia, Spain, was founded in 1933 as a local cooperative. A defining moment arrived in 1995 when the Jewish Community of Barcelona asked the estate to produce a high-quality Kosher wine under strict rabbinical supervision. This initiative birthed Peraj Petita, propelling the winery to international recognition as a premier producer of fine European Kosher wines crafted from mountain terroir.

## Interesting facts

- Peraj Petita means 'Little Flower' in Hebrew, celebrating the winery's historic partnership with Barcelona's Jewish community.
- Unlike many Kosher wines, it is produced Lo Mevushal (unpasteurized) to preserve its natural mountain terroir expression.
- Grapes are hand-harvested from old bush vines planted on clay, granite, and slate soils in Montsant.

## Food pairing

This medium-bodied red wine features soft tannins and vibrant acidity, making it remarkably versatile. It pairs seamlessly with light roasted meats, rice dishes like paella, and grilled mountain vegetables without overwhelming delicate culinary flavors.

## Wine making process

Hand-harvested from slopes and terraces at 180 to 450 meters elevation, the grapes grow on clay, granite, and slate soils. All varieties undergo temperature-controlled alcoholic fermentation together in stainless steel tanks at 24°C–28°C, followed by malolactic fermentation in stainless steel. The wine completes a short aging period in third-year French oak barrels before bottling to preserve fresh fruit character while adhering to strict Lo Mevushal Kosher standards.
