## About this wine

Founded in 2005 by Seth and Laura Martin, Perissos Vineyard & Winery is situated in Hoover's Valley within the Texas Hill Country. The estate's name derives from a Greek word meaning exceeding abundantly, beyond what is expected or imagined. Planted on rare decomposed granite soils, the estate's Aglianico vines thrive in the intense Texas sun, yielding structured, fine red wines made from this historic southern Italian grape variety.

## Interesting facts

- The name Perissos is derived from a New Testament Greek word meaning exceeding abundantly, beyond expectations.
- Aglianico retains high natural tartaric acidity despite hot Texas summers, requiring no cellar acidification.
- The 2021 Free Run bottling earned a Gold Medal at the 2024 TEXSOM Awards.

## Food pairing

High natural acidity and rich, muscular tannins call for fatty, savory, and protein-rich dishes. Grilled meats, slow-braised beef, and aged hard cheeses match the wine's powerful structure and intensity.

## Wine making process

Hand-harvested estate fruit undergoes a cool fermentation to retain floral aromatics and fruit purity, followed by extended gentle maceration. For the 2021 vintage, winemaker Seth Martin separated the juice into Free Run and Press Fraction bottlings. The wine was aged for approximately 24 months in a combination of French and American oak barrels.
