## Food pairing

The high, crisp acidity and unoaked purity of this Petit Chablis cut through the rich texture of soft cheeses and perfectly complement fresh, salty seafood.

## Wine making process

Harvested mechanically using gentle third-generation harvesters. Alcoholic fermentation takes place in 100% temperature-controlled stainless steel vats at 18°C for 15 to 18 days. This is followed by 100% controlled malolactic fermentation to soften acidity. The wine is aged on fine lees in stainless steel tanks for 4 to 6 months with weekly pump-overs prior to light filtration and bottling.
