## About this wine

Domaine Vincent Dauvissat is widely regarded as one of the ultimate benchmark producers in Chablis. Located in the northern reaches of Burgundy, the estate is famous for creating profoundly mineral, age-worthy wines. The Petit Chablis comes from plateau vineyards located directly above the Grand Cru slope, giving this wine an exceptionally high standard of depth and character far exceeding typical classifications for the appellation.

## Interesting facts

- Dauvissat's Petit Chablis vines sit on the high plateau directly above Les Clos, one of Chablis' finest Grand Crus.
- The domaine has been practicing biodynamic and organic viticulture for decades to preserve soil health.
- Vincent Dauvissat is one of the very few winemakers in Chablis still using traditional oak barrels for aging.

## Food pairing

The vibrant high acidity and steely character of this Chablis effortlessly slice through rich seafood and creamy sauces while complementing fresh, tangy goat cheese.

## Wine making process

Grapes are harvested by hand and subjected to gentle pneumatic pressing. Fermentation occurs naturally with indigenous yeasts. In classic Dauvissat fashion, a portion of the wine is aged in aged oak barrels (feuillettes) to add subtle texture without masking the pristine fruit, while the remainder ages in stainless steel on fine lees before bottling.
