## About this wine

Domaine Les Bertrand is located in Fleurie, Beaujolais, where Yann Bertrand returned in 2012 to farm organically and biodynamically alongside his family. The 'Phénix' cuvée was born as a micro-négociant project after disastrous frost and hail struck the region in 2015 and 2016. Sourced from high-elevation granite plots at 400 meters altitude near the chapel of La Madone, this wine reflects Yann's commitment to low-intervention natural winemaking and partnership with organic local growers.

## Interesting facts

- The name Phénix reflects the cuvée rising like a phoenix after 2015-2016 frost and hail destroyed up to 100% of estate crops.
- A portion of the wine is aged in neutral oak barrels previously used for Syrah in the Northern Rhône Valley.
- Every bottle is racked by gravity according to the lunar calendar and hand-sealed with red wax.

## Food pairing

Fleurie Gamay features low, silky tannins, high natural acidity, and bright floral character. It excels alongside poultry, pork, charcuterie, and earthly wild mushrooms, providing refreshing balance without overwhelming delicate protein flavors.

## Wine making process

Grapes are 100% hand-harvested in 300 kg crates with strict vineyard sorting. The winemaking employs cold carbonic maceration lasting 18 to 22 days at low temperatures using ambient yeasts and no added sulfur. Aging takes place for 7 to 8 months in 90% 500L-600L demi-muids and 10% neutral oak barrels. Bottling is done by gravity following lunar cycles without fining or filtration, and bottles are sealed with red wax.
