## About this wine

The Eikendal Pinotage 2019 is a red wine from Eikendal Vineyards in Stellenbosch, South Africa, made from 100% Pinotage grapes. The estate, owned by the Saager family since 1981, is situated in a prime wine-growing area benefiting from a distinct microclimate. The vineyards are a blend of 20-year-old, non-irrigated Pinotage blocks on decomposed granite and 'Koffieklip' soil, supplemented by grapes from the Elgin Valley. Eikendal's philosophy combines modern viticulture with Old World winemaking techniques to achieve fruit intensity and structural integrity while maintaining elegance.

## Interesting facts

- Grapes hail from 20-year-old, dryland Stellenbosch vines.
- A portion of grapes are sourced from the cooler Elgin Valley.
- Fermented with 35% whole bunches.
- Aged in 500L Burgundian oak barrels.

## Food pairing

The wine's medium body and fruit-forward profile make it versatile. Its subtle oak notes complement richer dishes, while its inherent fruitiness can stand up to slightly sweet elements. The velvety tannins provide a good counterpoint to proteins.

## Wine making process

The winemaking process for the Eikendal Pinotage 2019 began with hand-picked and cooled grapes. A 15-day pre-soaking at below 10°C preceded wild fermentation, during which 35% whole bunches were incorporated. Fermentation occurred slowly at around 30°C with daily manual punch-downs until dry. Following fermentation, the wine was racked and pressed before being aged for 12 months in 500-liter Burgundian oak barrels, a mix of second, third, and fourth fill.
