## About this wine

Papras Bio Wines is a family-run estate located in Tyrnavos, Thessaly, nestled along the southern slopes of Mount Olympus in Greece. Led by oenologist Stergios Papras alongside his brother Thomas and his son, the winery is a historic pioneer of sustainable viticulture in the country, having earned organic certification in 1990. The cuvée 'Pleiades' takes its name from the star nymphs of Greek mythology, symbolizing the high-altitude, mountain-influenced microclimate of the region.

## Interesting facts

- Named after the star nymphs of Greek mythology, reflecting the vineyard's proximity to Mount Olympus.
- Papras Bio Wines was among the very first estates in Greece to achieve official organic certification in 1990.
- Crafted using 30 days of skin and stem contact with free-run juice, completely without mechanical pressing.

## Food pairing

The extended skin contact provides structural grip and mild phenolic tannins, while high natural acidity keeps the palate fresh. These attributes allow the wine to cut through rich roasted meats and complement salty, briny Mediterranean cheeses and seafood dishes effortlessly.

## Wine making process

Crafted from 100% organic, hand-harvested Roditis grapes planted in 1991 in limestone-rich soils. The winemaking features 30 days of skin and stem contact in 600-liter stainless steel tanks. Fermentation occurs spontaneously with wild yeasts for 10 days under ambient temperatures without thermoregulation. Only free-run juice is extracted without mechanical pressing, and the wine naturally completes malolactic fermentation. It is matured in stainless steel without oak, then clarified through natural racking and bottled unfined and unfiltered with minimal sulfur additions.
