## About this wine

Poderi Luigi Einaudi was established in 1897 when 23-year-old Luigi Einaudi acquired the Cascina San Giacomo estate in Dogliani. Einaudi would go on to become a prominent economist and the first constitutional President of the Italian Republic in 1948, famously returning to his estate every year to oversee the grape harvest. Today, the estate spans historic vineyard sites in Dogliani and is managed by his great-grandson, Matteo Sardagna Einaudi. Dogliani is widely regarded as the spiritual home of the Dolcetto grape, elevated to DOCG status in 2011.

## Interesting facts

- Founder Luigi Einaudi became Italy's first constitutional President in 1948 and never missed a single annual harvest during his presidency.
- Dogliani is considered the premier terroir for Dolcetto, earning the region DOCG status elevated above standard DOC classification.
- The wine spends zero time in oak, maturing purely in concrete and stainless steel tanks to maintain intact fruit expression.

## Food pairing

The moderate tannins, vibrant acidity, and bright fruit nature of Dolcetto make it an exceptionally versatile food wine. It cuts through the fat of cured meats, complements savory pasta ragùs, and pairs seamlessly with poultry and roasted meats without overpowering them.

## Wine making process

Grapes are hand-harvested from vineyards sitting at 350 meters altitude on marly-calcareous-clay soil. Fermentation occurs in temperature-controlled stainless steel and concrete tanks at 28°C. Maceration is kept short at 4 to 5 days to retain fresh fruit aromas and prevent over-extracting harsh tannins. Malolactic fermentation is completed in tank. The wine undergoes maturation for 8 to 9 months in concrete and stainless steel tanks with zero oak exposure, followed by 2 months of bottle aging before release.
