## About this wine

Domaine Bobinet was founded in 2002 by Sébastien Bobinet, who took over his family's historic vineyards in Saumur. Joined by his partner Émeline Calvez in 2011, they have become leading figures in the Loire Valley's natural wine movement. 'Poil de Lièvre' (meaning 'Hare's Fur') is a pure expression of Chenin Blanc grown on the region's famous tuffeau limestone soils. The estate is dedicated to the philosophy of 'Vins Vivants' (living wines), focusing on biodiversity, manual labor, and minimal intervention to let the unique terroir of Saumur speak clearly without cosmetic adjustments.

## Interesting facts

- The name 'Poil de Lièvre' (Hare's Fur) refers to the golden, slightly amber color the Chenin Blanc grapes take on when they reach perfect ripeness.
- Sébastien Bobinet represents the fifth generation of winemakers in his family, continuing a deep-rooted Loire Valley legacy.
- The estate's vineyards are fully organic and biodynamic, emphasizing biodiversity and soil health to produce 'living wines'.

## Food pairing

The high natural acidity and vibrant mineral core of this Chenin Blanc make it an exceptional partner for seafood and dishes with high fat or cream components, which the acidity cuts through beautifully. Its subtle herbaceous and orchard fruit notes complement fresh herbs and goat cheese perfectly.

## Wine making process

This natural white wine is crafted from 100% Chenin Blanc grapes, hand-harvested at optimal ripeness. In the cellar, the winemaking process is highly non-interventionist. Fermentation occurs spontaneously using only indigenous yeasts in temperature-controlled stainless steel tanks to preserve the grape's natural freshness and linear precision. Malolactic fermentation occurs naturally. The wine is aged entirely in stainless steel tanks on its fine lees before being bottled unfined and unfiltered, with minimal or no sulfur added to maintain its vibrant, living character.
