## About this wine

Domaine Les Bottes Rouges was founded in 2012 by Jean-Baptiste Ménigoz, a former special education teacher from Arbois who trained under renowned Jura producer Stéphane Tissot. In 2014, Florien Kleine Snuverink joined the estate. Located in Abergement-Le-Petit in the Jura region of eastern France, the domaine works organically and biodynamically across small vineyard parcels to produce expressive, low-intervention wines.

## Interesting facts

- The estate name Les Bottes Rouges (The Red Boots) is a homage to a song by the French punk rock band Les Wampas.
- Founder Jean-Baptiste Ménigoz was a special education teacher before making a career change into winemaking.
- Made in the topped-up ouillé style to protect against oxidation and preserve pure fruit and minerality.

## Food pairing

The bright acidity and textured minerality cut through rich butter and cream sauces while enhancing delicate white fish and poultry. The wine's savory mountain character complements earthy mushroom dishes and regional cheeses like Comté.

## Wine making process

The Pollock Chardonnay is sourced from two clay and limestone parcels planted around 1990. Grapes are hand-harvested and subjected to whole-bunch direct pressing. Fermentation occurs spontaneously with native yeasts in oak barrels. The wine is aged for 12 to 20 months in a combination of 500-liter old oak barrels and 20-hectoliter concrete tanks using the non-oxidative ouillé method, where barrels are topped up regularly. Bottled unfined and lightly filtered with minimal added sulfur.
