## About this wine

Barbichette is a natural wine project created by César Vega and Louisiane Remy in New York's Finger Lakes region. Sourcing fruit from organic growers around Seneca Lake, Barbichette focuses on minimal-intervention winemaking produced in small, handcrafted batches.

## Interesting facts

- Founded by César Vega and Louisiane Remy, who also established Café Integral coffee roasters in Brooklyn.
- Crafted by pressing freshly harvested Pinot Noir directly over macerated grape skins.
- Produced in extremely limited allocations of around 100 cases per vintage.

## Food pairing

This light, high-acidity red pairs brilliantly with fatty fish, pork, and cured meats. Its bright acidity cuts through rich fats while its soft tannin structure ensures delicate seafood proteins are not overwhelmed.

## Wine making process

Made from organically farmed Pinot Noir harvested early for vibrant freshness. Freshly picked Pinot Noir is whole-cluster pressed directly over macerated Pinot Noir skins. Fermentation takes place spontaneously with native yeasts in stainless steel tanks and neutral oak barrels. The wine is bottled unfined, unfiltered, and without added sulfites.
