## About this wine

Poolz #2 is a handcrafted red blend produced by Joe Swick, a 5th-generation Oregonian winemaker dedicated to minimal-intervention winemaking. The cuvée combines Pinot Noir from Finnigan Hill Vineyard in Oregon's Chehalem Mountains with Mourvèdre from head-trained bush vines in Washington's Rattlesnake Hills. Reflecting Swick's philosophy of authentic, low-intervention expressions, this bottling highlights Pacific Northwest terroir through organic viticulture and patient cellar work.

## Interesting facts

- Combines Pinot Noir from Oregon and Mourvèdre from Washington in a multi-state blend.
- Aged in neutral barrels for 24 months, double the standard duration for Swick reds.
- Winemaker Joe Swick completed 15 harvests globally before returning to Oregon.

## Food pairing

The wine's bright acidity and supple tannins cut neatly through rich fats in roasted lamb and cured meats, while its earth-driven savory complexity pairs seamlessly with wild mushroom dishes and aged hard cheeses.

## Wine making process

Made using 100% certified organic fruit, the wine undergoes whole-cluster native yeast fermentation. The Mourvèdre completes two weeks of skin maceration prior to pressing. Fermentation finishes in barrel, followed by 24 months of aging in neutral oak barrels—twice as long as standard Swick red cuvées. It is bottled unfined and unfiltered with minimal sulfur added at bottling.
