## About this wine

Domaine Bertin-Delatte was founded in 2008 by Geneviève Delatte and Nicolas Bertin in Rablay-sur-Layon, situated in the Anjou district of France's Loire Valley. Starting with just 1.5 hectares, the estate has grown to roughly 4.5 hectares of organically farmed vines planted on distinctive red schist soils. The winemaking pair are active members of 'En joue Connection', a collective of local vignerons dedicated to natural viticulture and regional terroir expression.

## Interesting facts

- Aged on lattes for over 24 months, which is extraordinarily long for a Pétillant Naturel.
- Made with zero added sulfites from grapes grown on striking red schist soils.
- Produced by a boutique estate managing fewer than 5 hectares in total.

## Food pairing

High natural acidity and lively effervescence cut through rich fats and creaminess, making this wine an ideal match for fresh goat cheese and delicate seafood.

## Wine making process

Crafted according to the Méthode Ancestrale, Popsec is fermented using native yeast without added sugar or chaptalization. The wine is bottled during primary fermentation without added sulfites. It undergoes an unusually long aging period sur lattes of over two years prior to disgorgement, achieving fine perlage while retaining natural freshness.
