## About this wine

Domaine Laurent Perrachon & Fils is a historic estate whose winemaking roots in the region date back to 1601. Established in Juliénas at Château de la Bottière in 1877, the family now spans six and seven generations working together. While famed for their Beaujolais crus, they produce exceptional white Burgundies from choice parcels in the Mâconnais. This Pouilly-Fuissé Vieilles Vignes comes from old vines averaging 50 years old planted across clay-limestone, schist, and sandstone soils in Fuissé, Solutré, and Vergisson.

## Interesting facts

- The Perrachon family winemaking roots in the region trace all the way back to 1601.
- Vines for this Pouilly-Fuissé cuvée average 50 years of age, providing intense flavor concentration.
- Aged for 12 months using a combination of 50% stainless steel tanks and 50% oak demi-muids.

## Food pairing

The rich body and balanced oak maturation of this old-vine Pouilly-Fuissé require dishes with moderate richness and creamy textures. Fresh seafood, poached scallops, poultry in light cream sauces, and local goat cheese harmonise beautifully with the wine's acidity and subtle mineral depth.

## Wine making process

Grapes are harvested and subject to a light pneumatic pressing followed by a 24-hour cold settling. Fermentation takes place at low temperatures (16–20°C) over 20 to 30 days. The wine is aged for 12 months, split equally between stainless steel tanks (50%) and oak demi-muids (50%), before being fined and filtered.
