## About this wine

Fattoria Montecchio is situated in San Donato in Poggio, within the heart of the Chianti Classico region. Owned by the Nuti family, the estate blends centuries of Tuscan agricultural tradition with modern viticultural practices. 'Priscus' is a contemporary expression of Sangiovese, crafted to showcase the grape's vibrant fruit character and the unique terroir of the Tuscan hills. It represents an approachable, fresh style of Tuscan red, designed to be enjoyed in its youth while still paying homage to the region's winemaking heritage.

## Interesting facts

- The name 'Priscus' is Latin for 'ancient' or 'venerable,' paying homage to the deep historical roots of Sangiovese in Tuscany.
- Fattoria Montecchio features an ancient underground cellar dating back to the Roman era, which is still used for aging wines today.
- The estate operates its own traditional terracotta kiln, producing amphorae used for specialized winemaking on-site.

## Food pairing

The high natural acidity and moderate tannins of Sangiovese make it an exceptionally food-friendly wine. It cuts beautifully through rich, fatty meats and pairs naturally with tomato-based sauces, matching their acidity. Herbaceous notes in the wine complement dishes seasoned with rosemary, thyme, and oregano.

## Wine making process

The Sangiovese grapes for Priscus are hand-harvested at optimal ripeness. Fermentation takes place in temperature-controlled stainless steel tanks to preserve the bright, primary fruit aromas of the grape. Maceration on the skins lasts for approximately 10 to 15 days. Following fermentation, the wine is aged primarily in stainless steel and concrete vats to maintain its fresh, fruit-forward profile, avoiding heavy oak influence before bottling and undergoing brief bottle refinement.
