## About this wine

Founded in 2001 by Roberto Maestri in Montecchio Emilia, Azienda Agricola Quarticello is dedicated to reviving authentic Emilian winemaking. Situated along the banks of the Enza River in the Apennine foothills, the estate manages small plots on deep alluvial clay and sand soils. Roberto focuses on ancestral methods to showcase the true character of indigenous Emilian grapes, crafting expressive wines without industrial shortcuts.

## Interesting facts

- Crafted using the ancestral method (Méthode Ancestrale) where refermentation occurs naturally inside the bottle using reserved grape must.
- Combines Lambrusco Maestri for structure and deep color with Lambrusco Grasparossa for vibrant dark fruit aromatics.
- Sealed with a crown cap rather than a cork, which is classic for authentic, bottle-refermented natural frizzante wines.

## Food pairing

The vibrant acidity and fine effervescence cut effortlessly through the rich fats of cured Emilian meats, pork ragù, and fried dough, while the dry palate and gentle tannins balance savory umami components like aged Parmigiano Reggiano without overpowering them.

## Wine making process

Harvested by hand in small crates, the grapes undergo spontaneous fermentation with wild yeasts on skins for 6 to 14 days. The sparkling nature is achieved via the ancestral method, where a second spontaneous fermentation takes place in the bottle using retained unfermented grape must from the same harvest. The wine is bottled unfiltered and unclarified, resting on its lees for 6 to 8 months without disgorgement.
