## About this wine

Azienda Agricola COS was founded in 1980 by Giambattista Cilia, Cirino Strano, and Giusto Occhipinti in Vittoria, southeastern Sicily. The estate name is an acronym created from the founders' family names. COS played a key role in modern Sicilian viticulture, pioneering organic and biodynamic farming, low-intervention winemaking, and the preservation of native Sicilian grape varieties.

## Interesting facts

- The producer name COS is an acronym of the founders' family names: Cilia, Occhipinti, and Strano.
- Unlike COS's famed Pithos line, Ramì is fermented and aged in concrete rather than terracotta amphorae.
- The wine undergoes 7 to 10 days of skin contact, offering a light and approachable entry into orange wine.
- Vineyards are planted in red soils (terre rosse) composed of siliceous sands over limestone and clay.

## Food pairing

The structural balance between subtle skin-contact tannins, crisp acidity, and textured minerality allows this skin-contact white to pair seamlessly with both seafood and roasted savory white meats.

## Wine making process

Harvested manually in September from organic vineyards grown in red soils at 230 meters elevation. Spontaneous fermentation occurs with indigenous yeasts in vitrified concrete vats, accompanied by 7 to 10 days of skin contact. The wine is aged for 9 months in concrete vats followed by 3 months of bottle refinement before release, avoiding oak aging to preserve fruit purity and freshness.
