## About this wine

Régis & Sylvain was established in Marseille in 2017 by cousins Régis Tuccinardi and Sylvain Grosshans. Operating under an innovative négoce model, they collaborate with sustainable grape growers across France to craft unpretentious, low-intervention wines. Sourced from 35-year-old Chardonnay vines near Péronne in the Mâconnais sub-region of Burgundy, this single-vintage Blanc de Blancs reflects the region's clay-limestone soils. The 2023 harvest in Burgundy offered balanced maturity and crisp vitality ideal for high-quality sparkling wine production.

## Interesting facts

- Founded in Marseille by two cousins—a former finance professional and an oenologist.
- Aged on lees for 19-20 months prior to disgorgement without any added sugar dosage.
- Sourced from 35-year-old Chardonnay vines grown on clay-limestone soils in the Mâconnais.

## Food pairing

The lively acidity and fine persistent mousse of this zero-dosage sparkling Blanc de Blancs cut through rich textures, complement briny ocean notes, and pair seamlessly with fresh, delicate cheeses without adding unwanted sweetness.

## Wine making process

Hand-harvested grapes undergo primary fermentation using indigenous yeasts in temperature-controlled stainless steel tanks at 15°C, followed by complete malolactic conversion. The wine undergoes secondary bottle fermentation and ages on its lees for 19 to 20 months before disgorgement. Bottled as Brut Nature with zero added dosage and low sulfur intervention (25 mg/L total SO2), the wine is produced without fining or heavy filtration.
