## About this wine

Founded in 2017 by cousins Régis and Sylvain, who left careers in finance and viticulture, this project operates as a modern 'gypsy winemaking' venture. Sourcing high-quality grapes from sustainable partners in the Loire Valley, they craft terroir-focused, clean wines. The name 'La Rascasse' (scorpionfish) is a playful nod to their hometown of Marseille, where the fish is a key ingredient in the traditional Bouillabaisse. They focus on minimal-intervention methods and are members of the RAW WINE community.

## Interesting facts

- Named after 'La Rascasse' (scorpionfish), a key ingredient in Bouillabaisse, honoring the founders' hometown of Marseille.
- The producers operate as 'gypsy winemakers,' sourcing grapes from sustainable partners rather than owning vineyards.

## Food pairing

This high-acid, mineral-driven Sauvignon Blanc excels alongside fresh seafood and goat cheese. Its vibrant acidity cuts through rich textures like sea urchin or creamy goat cheese, while its clean citrus and saline profile mirrors the freshness of raw fish and shellfish.

## Wine making process

The Sauvignon Blanc grapes are sourced from clayey-siliceous soils over a granite base in the Loire Valley. The winemaking process involves a cold pre-fermentation maceration to extract aromatic precursors, followed by temperature-controlled fermentation. The wine is then aged on its fine lees for four months in concrete vats to build mid-palate roundness while preserving its vibrant, fresh fruit character. It is bottled directly on-site with minimal sulfites added.
