## About this wine

Aurélien Burgaud studied mathematics at Sciences Po before shifting his focus to viticulture in 2016, honing his craft at Domaine Thivin in Côte de Brouilly. In 2020, he established his micro-domaine by taking over small plots of old vines adjacent to a 16th-century chateau in Régnié. The name 'Le Nouveau Monde' ('The New World') is a tongue-in-cheek nod to Beaujolais Nouveau, signalling instead a terroir-driven, serious expression of Cru Régnié crafted with non-interventionalist principles.

## Food pairing

The vibrant acidity and refined, low-key tannins of Gamay cut effortlessly through the rich fats in duck, pork, and cured charcuterie, while complementing subtle earthy tones in mushrooms without overpowering the food.

## Wine making process

Harvested manually in small crates from 40 to 45+ year-old vines grown on pink granite soils. The vineyard is farmed organically and biodynamically, using manual pick-axes and horse-drawn plowing to protect ancient root systems. Fermentation occurs naturally with ambient native yeasts in the historical cellar of natural winemaker Christian Ducroux. Using a traditional, anti-carbonic vinification approach without additives, the wine undergoes minimal intervention and zero to low added sulfur before bottling unfiltered.
