## About this wine

Reserva Heredad is the flagship Cava from Segura Viudas, an ancient estate in Torrelavit dating back to the 11th century. Originally serving as a military outpost during the Iberian Crusades, the property transitioned to agriculture and eventually became a benchmark for premium sparkling wine production. The wine is instantly recognizable by its iconic, hand-applied pewter-style metal base and shield bearing the estate's crest. Under their 'Respect the Roots' campaign, Segura Viudas is highly committed to sustainable viticulture, actively protecting the local biodiversity, native bird species, and river ecosystems surrounding their historic vineyards.

## Interesting facts

- The estate's history dates back to the 11th century, when it served as a military outpost during the Iberian Crusades.
- Each bottle features an iconic, hand-applied pewter-style metal base and shield bearing the Segura Viudas crest.
- Before disgorgement, every bottle is hand-shaken (poignettage) to maximize yeast contact and enhance creaminess.
- Only the first 50% of the grape juice extraction, known as the flower must, is used to craft this premium cuvée.

## Food pairing

The high acidity and fine effervescence of this aged Cava act as a palate cleanser, cutting through rich fats like Jamón Ibérico and creamy cheeses. Meanwhile, its complex autolytic character (brioche, toast) beautifully complements earthy flavors like truffles and porcini mushrooms, while its crispness enhances fresh seafood.

## Wine making process

The 2021 vintage is crafted from hand-picked grapes sourced from old-vine parcels. To ensure maximum elegance, only the first 50% of the extracted juice—the delicate 'flower must'—is selected. Primary fermentation occurs in temperature-controlled stainless steel tanks at 14–16°C using proprietary yeasts. The final blend comprises nine distinct base wines. Following the traditional method, the wine undergoes secondary fermentation in the bottle and is aged on its lees for a minimum of 30 months. Every bottle is hand-riddled in traditional wooden pupitres and subjected to 'poignettage' (a sharp manual wrist twist) before disgorgement to maximize yeast autolysis and build its signature creamy texture.
