## About this wine

Weingut Robert Weil, located in the historic village of Kiedrich in the Rheingau region, was founded in 1875 by Dr. Robert Weil. Today, under the leadership of his great-grandson Wilhelm Weil, the estate is globally recognized as a pioneer of premium German Riesling. This Kabinett is sourced from steep, high-altitude vineyards in Kiedrich, notably the Wasseros site adjacent to the Grand Cru Gräfenberg. These cooler, wind-exposed slopes provide a natural buffer against climate change, preserving the signature tension and mineral drive of the estate's wines.

## Interesting facts

- Founded in 1875 by Dr. Robert Weil, a Sorbonne professor who fled Paris during the Franco-Prussian War.
- Sourced from steep, high-elevation slopes adjacent to the famous Grand Cru Gräfenberg vineyard.
- Harvesting requires up to 17 meticulous hand-selection sweeps through the vineyards to pick only perfect grapes.

## Food pairing

This off-dry Riesling Kabinett works beautifully with spicy and aromatic dishes because its natural residual sweetness tames the heat of chili, while its electrifying acidity cuts through rich proteins and cleanses the palate. The wine's intense stone fruit and citrus flavors complement sweet-and-sour profiles, and its light body ensures it does not overwhelm delicate seafood or fresh cheeses.

## Wine making process

The grapes are harvested entirely by hand, requiring up to 17 selective passes through the vineyards to ensure only perfectly ripe, healthy fruit is collected. In the cellar, the grapes undergo whole-bunch pressing. Fermentation is conducted slowly at cool temperatures in stainless steel tanks, followed by maturation in temperature-controlled stainless steel. This process is designed to preserve the delicate primary fruit aromas, vibrant acidity, and natural residual sweetness without any oak influence.
