## About this wine

Domaine Weinbach, located in Kaysersberg, Alsace, was established in 1612 by Capuchin friars. Since 1898, it has been owned and passionately run by the Faller family. Named in honor of Théo Faller, who was a key figure in promoting the quality and prestige of Alsace wines, 'Cuvée Théo' is sourced from the historic Clos des Capucins vineyard. This walled estate benefits from a unique microclimate, producing Riesling with exceptional purity, mineral drive, and elegant structure.

## Interesting facts

- Named in honor of Théo Faller, a prominent figure who dedicated his life to raising the prestige of Alsace wines.
- The grapes are sourced from the historic Clos des Capucins, a walled vineyard dating back to 1612.
- Domaine Weinbach has been practicing biodynamic viticulture across all its vineyards since 1998.

## Food pairing

The high acidity and vibrant citrus profile of this dry Riesling cut through rich, fatty dishes like traditional Alsatian pork or buttery fish, while its mineral backbone complements delicate seafood and subtle Asian spices beautifully.

## Wine making process

The grapes are grown biodynamically (Demeter certified) on the sandy-silt soils of the Clos des Capucins. Harvested entirely by hand at optimal ripeness, the grapes undergo gentle whole-cluster pressing. Fermentation occurs spontaneously using indigenous yeasts in large, old oak casks (foudres). The wine is aged on its fine lees to add texture and complexity before bottling, preserving the natural acidity and terroir expression.
