## Wine making process

The Jurtschitsch Riesling Platin is produced from 100% Riesling grapes. The winemaking process begins with gentle whole-cluster pressing, with the clear must flowing into the cellar without the use of pumps. Fermentation takes place in cooled stainless steel tanks at approximately 18°C, often utilizing spontaneous fermentation without additives. Following fermentation, the wine matures on its fine lees in stainless steel tanks until early February. The winery practices certified organic farming, with some vineyards also managed according to biodynamic principles, emphasizing biodiversity and minimal intervention.
