## About this wine

Max Dexheimer represents the fifth generation of winemakers at his family estate in Saulheim, Rheinhessen, originally established in 1896. After completing oenology studies at Geisenheim University and training at top estates across Austria and Germany, Max launched his own low-intervention line in 2019 alongside partner Marika Tikas. Sourced from organic estate plots planted on limestone, loess, and clay, this bottling showcases modern German natural winemaking that respects classic regional tension.

## Interesting facts

- The distinctive label artwork is cut directly from a large custom painting commissioned from an artist friend.
- Max Dexheimer trained at celebrated wineries including Sekthaus Raumland, Franz Hirtzberger, and Knipser.
- The estate uses traditional 1,200-liter German neutral oak Stückfass vats for lees aging and maturation.

## Food pairing

The high acidity and completely dry nature of this Riesling cut cleanly through rich fats and creamy textures while refreshing the palate. Its vibrant citrus profile harmonizes with fresh seafood, light poultry, goat cheese, and dishes featuring citrus or gentle green spices without masking delicate flavors.

## Wine making process

Grapes are entirely hand-harvested from vines aged 15 to 25 years. Following whole-cluster direct pressing, the juice ferments spontaneously with native wild yeasts. Aging takes place on full fine lees in traditional 1,200-liter oval neutral German oak Stückfass vats and large wooden casks. The wine is bottled unfined and unfiltered with only a minimal addition of sulfur.
