## Food pairing

## Wine making process

The winemaking process for the Sordo Roero Arneis begins with hand-harvested grapes that undergo destemming and soft pressing. Vinification is conducted in stainless steel tanks with controlled temperatures. Fermentation with natural yeasts occurs in steel tanks at 15°C for 25 days. Following fermentation, the wine matures for 3 months on fine lees in stainless steel tanks, depending on the vintage, and is then aged for 3 months in the bottle before release.
