## About this wine

Domaine Philippe Tessier is an iconic estate located in the Loir-et-Cher region of the Loire Valley, celebrated for its minimal-intervention philosophy and organic viticulture certified since 1998. Founded by Roger Tessier in 1961, the domaine was developed by Philippe Tessier and is now led by Simon Tessier and Marie Drancourt. Romorantique is an innovative cuvée focused on Romorantin, an ancient white grape variety introduced to the Loire Valley by King Francis I in 1519. Planted in silica-clay soils over limestone, the estate's vines benefit from cool microclimatic influences between the Loire River and surrounding forests.

## Interesting facts

- Romorantin was originally introduced to the Loire Valley by King Francis I in 1519.
- The grapes undergo skin maceration in buried Georgian qvevri for up to seven months.
- Domaine Philippe Tessier has been certified organic since 1998.

## Food pairing

The skin-contact depth and crisp natural acidity of this white Romorantin cut seamlessly through rich textures like cream sauces and aged regional goat cheeses, while its complex herbal and stone fruit elements harmonize with gently spiced dishes.

## Wine making process

Hand-harvested from vines aged 20 to 40+ years, 100% destemmed grapes undergo skin maceration in buried Georgian amphorae (qvevri) for three to seven months. Fermentation occurs spontaneously using only native yeasts with zero chemical adjustments or chaptalization. Complete natural malolactic fermentation occurs in amphorae before pressing. The wine is aged in amphorae and vats and bottled unfined and unfiltered with minimal total sulfur dioxide.
