## About this wine

The Roncicone 2019 is a Chianti Classico Gran Selezione DOCG from Ricasoli, a single-vineyard wine made from 100% Sangiovese. It originates from the Roncicone vineyard, identified through extensive soil analysis by Francesco Ricasoli. The vineyard's soil composition, featuring marine deposits and fossils, contributes to the wine's distinct character. Ricasoli is one of Italy's oldest wine estates, with a history stretching back to 1141, and is known for its commitment to scientific vineyard mapping and clonal selection.

## Interesting facts

- Roncicone is one of three 'cru' sites identified by Ricasoli through soil analysis.
- The vineyard soil is rich in marine fossils and lignite.
- Ricasoli estate dates back to 1141, making it one of Italy's oldest.
- Bettino Ricasoli is credited with the modern Chianti Classico recipe.

## Food pairing

The wine's firm tannins and medium+ body are well-suited to complement the protein and fat in red meats, while its vibrant acidity can cut through richness. Herbal notes in the wine can echo savory herbs used in cooking, and the earthy undertones can harmonize with traditional Tuscan ingredients.

## Wine making process

The Roncicone 2019 is produced from 100% Sangiovese grapes harvested by hand on September 27, 2019. Fermentation takes place at 24-27°C with daily punch-downs for 14-16 days. The wine then undergoes aging for 22 months in 500-liter tonneaux, with 30% new oak and 70% second passage. The vineyard was planted between 1998-2000 at an elevation of 320 meters with a south-east exposure.
