## About this wine

Domaine Lise & Bertrand Jousset was established in 2004 in Montlouis-sur-Loire by Bertrand Jousset, a former military officer, and Lise Jousset, a trained sommelier. Championing organic and biodynamic viticulture, the estate focuses on minimal-intervention winemaking that lets the Loire terroir speak clearly. Rosé à Lies is crafted from old-vine Gamay and Grolleau grown on sand and flint over limestone bedrock, capturing a pure, vibrant expression of the region.

## Interesting facts

- Translates to 'Rosé on the Lees', keeping natural sediment in bottle to impart extra texture.
- Crafted from impressive 60-year-old Gamay vines and 80-year-old Grolleau vines.
- The winemakers explicitly advise drinking this fresh, lively Pét-Nat within one summer of release.

## Food pairing

The driving acidity, fine carbonation, and vivid red fruit profile of this sparkling rosé cut effortlessly through creamy goat cheese and fatty charcuterie, while complementing fresh summer produce and tart fruit desserts.

## Wine making process

Made using the traditional Méthode Ancestrale (Pétillant Naturel). Whole bunches are directly pressed and fermented with indigenous yeasts in 80% stainless steel tanks and 20% neutral 400L oak barrels. Fermentation is cold-shocked to pause at around 15 g/L residual sugar before bottling under crown cap, where fermentation naturally finishes inside the bottle. The wine remains completely undegorged on its lees, unfiltered, unfined, and produced with zero added sulfur.
