## About this wine

The Rosé d'Assemblage by Emmanuel Brochet is a distinctive Champagne crafted in the Montagne de Reims sub-region of Champagne, France. This non-vintage rosé is primarily composed of 90% Pinot Meunier and 10% Pinot Noir, sourced from the producer's own organically farmed vineyards, including old vines planted in 1965. Emmanuel Brochet, a meticulous first-generation grower, transitioned this cuvée from a 'saignée' method to an 'assemblage' approach to achieve a more elegant and fresh style. The wine is a reflection of his artisanal winemaking philosophy, emphasizing the expression of terroir and minimal intervention. Production is very limited, making it a highly allocated and sought-after Champagne.

## Interesting facts

- Predominantly made from old-vine Pinot Meunier (planted 1965).
- Transitioned from 'saignée' to 'assemblage' for greater freshness.
- Organically certified since 2011.
- Very limited production, highly sought after.

## Food pairing

The wine's high acidity and mineral notes cut through rich textures and complement the natural sweetness of seafood. Its red fruit and floral nuances pair well with roasted poultry and game, while its structure can stand up to richer dishes and aged cheeses.

## Wine making process

The Rosé d'Assemblage begins with grapes sourced from Emmanuel Brochet's organically farmed vineyards. The Pinot Meunier and Pinot Noir are pressed using a traditional vertical press. Fermentation is conducted with indigenous yeasts, and the base wines are aged for 11 months in oak barrels on their lees. The rosé is created using an assemblage method, blending white-vinified Pinot Meunier with a portion of red wine and rosé from previous vintages. The wine then undergoes bottle aging on its lees before disgorgement. The dosage is very low, reflecting the Extra Brut style.
