## About this wine

Rózsa Petsovits is a unique, cross-border natural rosé produced by Weingut Weninger. The wine is named in honor of Franz Weninger's grandmother, who was born in Horitschon in 1921—the exact year the town transitioned from Hungary to Austria. To reflect this rich history, the grapes are sourced from estate vineyards spanning both Balf in Sopron, Hungary, and Horitschon in Mittelburgenland, Austria. This wine represents a bridge between cultures and terroirs, crafted by a pioneer of biodynamic viticulture.

## Interesting facts

- Named after winemaker Franz Weninger's grandmother, born in 1921 during the geopolitical border shift between Hungary and Austria.
- A true cross-border wine, blending grapes grown on gneiss soils in Hungary with those from clay-loam and limestone in Austria.
- Certified biodynamic by Demeter and Respekt-BIODYN, bottled unfiltered with minimal sulfur additions.

## Food pairing

This structured, high-acid dark rosé acts almost like a light red wine. Its vibrant acidity cuts through fatty charcuterie and rich fish like salmon, while its subtle phenolic grip and spicy undertones complement earthy dishes like mushroom risotto and gamey meats like duck.

## Wine making process

The grapes are selectively hand-harvested early in September to preserve high natural acidity. Vinification is carried out with minimal intervention: spontaneous fermentation occurs with indigenous yeasts over 10 days in large, neutral wooden barrels. The wine undergoes 100% spontaneous malolactic fermentation and is aged for six months on its fine lees in large neutral oak casks. It is bottled unfiltered and unfined, with no sulfur added during fermentation and only a minimal dose at bottling.
