## Wine making process

The Rust en Vrede Estate 2020 is produced from estate-grown grapes in Stellenbosch. The winemaking process involves hand-picking and sorting of the fruit, followed by separate vinification for each grape variety, vineyard parcel, and clone. Grapes are destemmed and crushed, then undergo a 21-day maceration period with a 7-day fermentation, utilizing pump-overs and manual punch-downs. Following fermentation, the wine is aged in 100% French oak barrels for 18 to 22 months, with a varied proportion of new and used barrels. The 2020 vintage experienced cool and dry ripening conditions, contributing to the development of ripe tannins.
