## About this wine

Saffredi is the flagship Super Tuscan of the coastal Maremma region, first produced in 1987. Conceptualized by Elisabetta Geppetti alongside legendary enologist Giacomo Tachis, who recognized the tremendous potential of the Tuscan coast for Bordeaux varietals, the wine is named in honor of her father-in-law, Fredi. Fredi inspired her love for grape-growing and planted the original vineyard but passed away before witnessing the wine's global fame. Today, under the guidance of consulting enologist Luca d'Attoma, Saffredi stands as a benchmark of elegance and power from southern Tuscany.

## Interesting facts

- Named in honor of Fredi, the father-in-law of Elisabetta Geppetti, who planted the original vineyard but passed away before its first release.
- Co-created by legendary enologist Giacomo Tachis, the pioneer behind iconic Super Tuscans like Sassicaia and Tignanello.
- The 2015 vintage achieved near-perfect critical acclaim, including a 99-point score from James Suckling and a 100-point score from Tuscan Vines.

## Food pairing

Saffredi's full body, high tannins, and vibrant acidity make it an exceptional partner for rich, protein-heavy dishes. The structural intensity of the wine cuts through the gelatinous richness of slow-cooked meats and the fat of marbled steaks, while the high acidity cleanses the palate. Avoid spicy or delicate seafood dishes, as the robust tannins and high alcohol will overwhelm them and create unpleasant metallic flavors.

## Wine making process

The 2015 Saffredi is a blend of Cabernet Sauvignon, Merlot, and Petit Verdot. Grapes were harvested between September 5 and October 7, 2015. Fermentation took place in temperature-controlled stainless steel vats at 26C to 28C, followed by 15 to 20 days of maceration on the skins. The wine was aged for 18 months in French oak barriques (75% new, 25% one-year-old), followed by an additional 4 to 6 months of bottle refinement before release. Fining was achieved naturally through gravity and settling without the use of animal proteins.
