## About this wine

Saint-Romain Blanc from Domaine Taupenot-Merme is a 100% Chardonnay from the Saint-Romain AOC in Burgundy, France. The estate is a seventh-generation family-owned winery with a long history. The Saint-Romain appellation is situated at high altitudes with limestone-rich soils, contributing to the wine's distinct character. The 2022 vintage benefited from favorable weather, resulting in a wine of finesse and balance. The domaine emphasizes minimal intervention in its winemaking approach, prioritizing vineyard work to express the terroir.

## Interesting facts

- Grapes are sourced from four specific vineyard plots: Combe Bazin, En Gollot, La Perière, and Le Marsain.
- The estate has been practicing organic viticulture principles since 2001/2002.
- Vines planted as early as 1957 contribute to the complexity of the wine.

## Food pairing

The wine's bright acidity and minerality cut through richer textures and fats, making it an excellent companion for seafood and poultry. Subtle notes of orchard fruit and brioche can complement dishes with creamy sauces or herbaceous elements.

## Wine making process

The winemaking process for Saint-Romain Blanc begins with whole-cluster pressing of the Chardonnay grapes. The juice is cold-settled for one to two days before fermentation commences in stainless steel tanks, utilizing indigenous yeasts. Following fermentation, the wine undergoes aging in oak barrels for 10 to 12 months, with a portion of new oak used. Malolactic fermentation occurs spontaneously in barrel. Some aging on fine lees is also part of the process.
