## About this wine

Saltram Wine Estates, founded in 1859 by William Salter and his son Edward in Angaston, is one of Australia's oldest continuously operating wineries. While famous for bold red wines, Saltram also crafts exceptional, long-lived Rieslings from high-altitude vineyards in the Eden Valley. Under Chief Winemaker Alex MacKenzie, the estate focuses on showcasing regional typicity and the unique mineral signatures of South Australia's ancient soils.

## Interesting facts

- Founded in 1859, Saltram is one of the oldest continuously operating wineries in South Australia's Barossa region.
- Some of the premium Riesling parcels are sourced from established old vines planted as far back as 1935.
- The 2020 vintage was aged for six years in bottle before its limited specialty release of only 3,000 bottles.

## Food pairing

This aged Riesling's high acidity and developed mineral complexity make it an outstanding partner for seafood and lightly spiced dishes. The crisp acidity cuts through rich textures, while the subtle petrol and honeyed notes complement aromatic Asian spices without clashing.

## Wine making process

Grapes are sourced from premium high-altitude vineyards (400 to 600 meters) in the Eden Valley, featuring stony, mineral-rich clay-loam soils. The grapes are crushed and cold-settled before undergoing temperature-controlled fermentation in stainless steel tanks to preserve pristine varietal purity and prevent oak influence. The 2020 vintage underwent approximately six years of bottle maturation prior to its specialty release.
