## About this wine

Domaine Caroline Morey was established in 2014 when Caroline Morey inherited historic vineyard plots from her father, Jean-Marc Morey, whose family has cultivated vines in Chassagne-Montrachet since the 16th century. Operating alongside her husband Pierre-Yves Colin in Chassagne-Montrachet, Caroline produces distinct wines under her own label. Les Cornières is a specific lieu-dit located in Santenay, situated directly below Santenay-le-Haut and near Premier Cru vineyards, characterized by limestone-rich soils.

## Interesting facts

- Caroline Morey is married to Pierre-Yves Colin; they share vineyard teams while making wines under separate labels.
- No lees stirring (bâtonnage) is performed to preserve natural acidity, mineral clarity, and prevent oxidation.
- Bottles are sealed with untreated natural long corks and finished with hand-dipped protective wax.

## Food pairing

The dynamic acidity and rich texture of this Chardonnay slice through rich butter and cream sauces while harmonizing with delicate seafood and savory roasted poultry.

## Wine making process

Grapes are hand-harvested early to maintain natural freshness and dynamic acidity. Vinification involves whole-cluster pneumatic pressing and ambient yeast fermentation. To retain purity and precision, no bâtonnage is performed. Aging takes place over 15 to 18 months in 350-liter oak demi-muids with up to 30% new oak, followed by bottling under untreated long natural corks finished with wax seals.
