## About this wine

Galactic Wine is the personal project of Miguel Viseu, head winemaker at Aphros, and his partner Emanuelle 'Leli' Dalla Costa. Founded in 2018 in Ponte de Lima, the name Saravá is a Brazilian greeting and spiritual blessing honoring nature. Operating in the Lima sub-region of Vinho Verde, the estate focuses on low-intervention interpretations of native Portuguese grape varieties grown on granite soils.

## Interesting facts

- The name Saravá is a Brazilian greeting and spiritual blessing honoring nature.
- Aged in traditional Portuguese chestnut wood barrels and clay amphorae.
- Crafted by Miguel Viseu, head winemaker at the famed biodynamic estate Aphros.

## Food pairing

The texture and light phenolic grip from four to five months of skin contact, combined with bright citrusy acidity, allow this natural orange wine to cut through rich lipids in pastrami and fried seafood while matching high-acid preparations like ceviche.

## Wine making process

Hand-harvested grapes are 90-95% destemmed before undergoing 4 to 5 months of extended skin maceration. Fermentation occurs naturally with indigenous yeasts. The wine is pressed using a traditional vertical manual basket press and aged for 2 to 3 months in 300-liter chestnut wood barrels and clay tinajas (amphorae). It is bottled unfined, unfiltered, and with minimal added SO2.
