## About this wine

Weingut Kollerhof am Eichberg is situated in Leutschach an der Weinstraße in Southern Styria, Austria, where winemaking traditions on the estate date back to the 14th century. Today, Birgit and Harald Lieleg manage 11 hectares of vineyards located on extreme steep-slope terrain at elevations surpassing 500 meters. This regional Gebietswein wine reflects the unique terroir of the Eichberger Konglomerat soil, producing an authentic representation of Southern Styrian Sauvignon Blanc.

## Interesting facts

- Vineyards are planted on steep slopes reaching elevations over 500 meters above sea level.
- Winemaking traditions on the Kollerhof estate date back to the 14th century.
- Grown on 'Eichberger Konglomerat', a pebble-rich weathered rock soil that encourages deep root growth.

## Food pairing

The lively acidity and expressive green and citrus character of Southern Styrian Sauvignon Blanc naturally harmonize with tangy goat cheese, fresh green vegetables, and tender white fish, balancing lightness without clashing with delicate flavours.

## Wine making process

Grapes are 100% selectively hand-harvested from steep south and south-east facing slopes. Chilled grape handling and cold skin contact under a protective carbon dioxide atmosphere preserve delicate varietal aromas. Gentle pressing minimizes bitter tannins, followed by temperature-controlled fermentation in stainless steel tanks using selected natural yeasts. The wine ages on fine lees in stainless steel until bottled.
