## About this wine

Marthe Henry grew up in Paris and pursued a career in journalism before returning to her family roots in Meursault in 2013. Her grandfather, Pierre Boillot, was a respected vigneron in the region. After completing viticultural studies at Le Viti in Beaune and completing apprenticeships with top regional producers, Marthe founded her own micro-négociant label in 2017. Operating from Meursault, she focuses on micro-quantities of artisanal, place-expressive wines sourced from organic plots across the Côte de Beaune, including the iron-rich soils of the Les Guettotes climat in Savigny-lès-Beaune.

## Interesting facts

- Founder Marthe Henry worked as a Parisian journalist before returning to Burgundy to honor her grandfather Pierre Boillot's winemaking legacy.
- This micro-producer crafts minute quantities, often producing only one or two oak barrels per targeted cuvée.
- The wine ages uninterrupted on fine lees in neutral oak casks for over 18 months without racking.

## Food pairing

The wine's bright acidity, fine-grained tannins, and moderate weight allow it to pair effortlessly with rich poultry, pork, and meaty fish. Earthy side elements complement its native savory character.

## Wine making process

Hand-harvested Pinot Noir grapes undergo whole-cluster or partial whole-bunch fermentations driven entirely by indigenous wild yeasts in open vats. Maceration spans approximately 15 days with gentle daily pump-overs. Vinification occurs without sulfur dioxide additions. The wine is aged for over 18 months on its fine lees in neutral 228-liter French oak Burgundy barrels, without racking. It is bottled with minimal added SO2 and without fining or heavy filtration.
