## About this wine

Scar of the Sea was founded in 2012 by winemaker Mikey Giugni along California's Central Coast. Focused on low-intervention, land-first winemaking, Mikey operates the winery alongside his spouse, Gina Giugni. In 2024, they secured their permanent home by purchasing the 29-acre Bassi Vineyard in Avila Beach, enabling them to transition to 80% personally farmed estate fruit. The SLO Coast Pinot Noir is a multi-vineyard cuvée sourcing fruit from ocean-influenced sites situated just miles from the Pacific Ocean.

## Interesting facts

- Vineyards are situated just 1 to 2 miles from the Pacific Ocean, receiving constant fog and sea breezes.
- The winery team personally farms four Demeter Certified Biodynamic vineyards in the SLO Coast AVA.
- Pressed using a traditional small wooden basket press and bottled completely unfined and unfiltered.

## Food pairing

The wine's bright ocean-influenced acidity, fine-grained tannins, and moderate alcohol make it exceptionally versatile at the table. Vibrant acidity cuts through rich birds like duck and oily fish like wild salmon, while earthy red fruit notes align seamlessly with mushroom dishes and roasted poultry.

## Wine making process

Harvested from certified biodynamic and organic sites, the grapes are fermented in small 1.5-ton open-top boxes using 100% native yeasts and native bacteria. Winemaking includes 10–20% whole-cluster inclusion with no chemical additions or adjustments. Pressing occurs using a traditional wooden basket press. The wine is aged for 7 months in neutral French oak barrels and racked once prior to bottling without fining or filtration, finished with minimal added sulfur.
