## About this wine

Sense Pressa is founded by Marius Long, who grew up in Paris in a family of restaurateurs from Auvergne before studying Viticulture and Oenology in Beaune. After gaining winemaking experience in Burgundy, Sancerre, Australia's Barossa Valley, and local domaines such as Mena and Mazière, Long established his estate in 2020. Located in the villages of Padern and Cucugnan in Hautes-Corbières, the domaine focuses on restoring steep, abandoned hillside plots set on limestone soils that were historically sidelined by mechanized agriculture.

## Interesting facts

- Sense Pressa translates from Catalan to 'Without Haste' or 'No Hurry'.
- Marius Long restores steep hillside plots that were abandoned when valley agriculture took over.
- Total domain production across all cuvées is extremely limited at only 8,000 to 10,000 bottles per year.

## Food pairing

The high natural acidity and moderate tannin structure of this cuvée make it extremely versatile at the table. The bright acidity cuts through rich pork, duck, and lamb fats, while the Mediterranean profile pairs seamlessly with grilled herbs and savory spices.

## Wine making process

Farming is conducted using organic and biodynamic principles with hand-harvesting in small baskets. Vinification is zero-input with no added sulfur, spontaneous fermentation via indigenous yeasts, and no temperature control. Whole cluster Grenache is blended with a short maceration of Carignan to limit extraction. Aging occurs in neutral tanks, and the wine is bottled unfined and unfiltered.
