## Food pairing

The wine's vibrant acidity cuts through the richness of creamy sauces and fattier proteins, while its minerality complements the delicate flavors of seafood. Herbal notes in the wine can echo those in the food, creating harmonious pairings.

## Wine making process

The Seven Springs Chardonnay is produced using 100% Chardonnay grapes. The winemaking process begins with whole cluster pressing. Fermentation is carried out using indigenous yeasts in a combination of once-used French barriques and Stockinger puncheons. Following fermentation, the wine undergoes approximately 12 months of aging in neutral French oak barrels and puncheons. It is then transferred to stainless steel tanks for an additional 6 months of aging before bottling. Production for the 2022 vintage was 2,722 cases.
