## About this wine

The Evening Land Vineyards Seven Springs Pinot Noir 2022 is an estate cuvée from the Eola-Amity Hills AVA in Oregon's Willamette Valley. It is crafted from 100% Pinot Noir grapes, primarily sourced from the oldest block at Seven Springs Vineyard, planted in 1982 with own-rooted Pommard clones. These approximately 40-year-old vines are dry-farmed and situated on iron-rich volcanic Jory soils. The vineyard, established in 1980, benefits from an east-facing slope and cooling Pacific breezes. Evening Land Vineyards is led by Rajat Parr and Sashi Moorman, who are committed to minimal intervention winemaking and biodynamic and organic farming practices, aiming to showcase the unique terroir of the Seven Springs Estate.

## Food pairing

The wine's medium body and vibrant acidity complement richer proteins like duck and pork, cutting through their fat. Its earthy undertones and red fruit notes harmonize with mushroom dishes and roasted poultry, while fine tannins provide structure to stand up to these flavors.

## Wine making process

The Seven Springs Pinot Noir is produced using indigenous yeast fermentation in closed-top concrete tanks, with minimal intervention such as no punchdowns or pumpovers. Grapes are hand-harvested and hand-sorted. The wine undergoes aging for approximately 5-6 months in neutral French oak barriques and concrete tanks. Farming practices at the vineyard are biodynamic and LIVE certified.
