## About this wine

Severus Marcampo is an IGT Toscana Rosso produced by Podere Marcampo, a family-run estate near Volterra. The wine is crafted from 100% Sangiovese grapes grown on a vineyard situated at 247 meters altitude, with soils of Pliocene clay rich in minerals due to ancient marine deposits. The vines are managed using organic farming practices. The 2017 vintage was noted for its warm and powerful character. Podere Marcampo is dedicated to producing wines that express the intense flavors of their land, respecting the influence of soil and climate.

## Food pairing

The wine's medium+ body and savory profile pair well with richer proteins like lamb and beef, where tannins can complement the meat's texture. Acidity in the wine can cut through richer sauces.

## Wine making process

Severus Marcampo is produced using 100% Sangiovese grapes. The harvest is carried out by hand with selection in small boxes. Fermentation and maceration take place in stainless steel vats for about 15 days under controlled temperatures, followed by natural malolactic fermentation. The wine is aged for 12 months in 2000-liter Slavonian oak barrels, with a subsequent period of 6 months in stainless steel vats (or alternatively, 24 months in large Slavonian oak barrels). Production is limited to around 2,500 bottles.
