## About this wine

Peller Estates, located in the heart of Ontario's Niagara Peninsula, is one of Canada's most historic and celebrated wineries. Established by Andrew Peller, the estate has spent decades pioneering cool-climate viticulture in the region. The Signature Series Ice Cuvée Rosé represents a uniquely Canadian innovation, combining the structure of traditional method sparkling wine with the lusciousness of Niagara's world-famous Icewine. Crafted by award-winning winemaker Katie Dickieson, this cuvée showcases the exceptional potential of the Niagara-on-the-Lake appellation, where the moderating influences of Lake Ontario and the Niagara Escarpment create an ideal microclimate for sparkling wine production.

## Interesting facts

- Instead of standard sugar cane dosage, this sparkling wine is finished with a unique addition of premium Canadian Icewine.
- Winemaker Katie Dickieson was named Winemaker of the Year at the 2023 Ontario Wine Awards.
- The wine undergoes secondary fermentation in the bottle and is aged on its lees for up to 14 months.

## Food pairing

The high acidity of this cool-climate sparkling wine cuts through rich, creamy textures like cheese and butter, while the subtle sweetness from the Icewine dosage beautifully complements slightly sweet or savory-sweet dishes. The effervescence acts as a palate cleanser, making it an exceptional match for seafood and lightly spiced meats.

## Wine making process

This sparkling wine is crafted using the traditional method (méthode classique). Grapes are hand-picked and whole-cluster pressed before undergoing primary fermentation in stainless steel tanks to preserve freshness. The base wines are blended and undergo secondary fermentation in the bottle, followed by 12 to 14 months of aging on the lees. At disgorgement, instead of a standard sugar dosage, the wine is finished with a unique 90ml to 110ml dosage of premium VQA Icewine (typically Vidal or Cabernet Franc Icewine), which adds complexity and a silky texture.
