## About this wine

Cantina Marilina was established in 2001 by winemaker Angelo Paternò in the Val di Noto region of southeastern Sicily. Recognizing the white calcareous limestone soils of the estate as ideal for natural viticulture, the winery is now managed by his daughters, Marilina and Federica Paternò. The Sikelè cuvée pays homage to the ancient Sicels, the indigenous inhabitants of eastern Sicily.

## Interesting facts

- The name Sikelè pays homage to the Sikeloi, the ancient native inhabitants of eastern Sicily.
- The wine undergoes a gentle 13-hour skin maceration to impart texture while maintaining fresh acidity.
- Fermented and aged entirely in concrete tanks without any oak influence.

## Food pairing

The bright Mediterranean acidity and delicate skin-contact texture cut through savory seafood, roasted vegetables, and aromatic herbs like fennel.

## Wine making process

Hand-harvested in small crates, the Grecanico Dorato grapes undergo a brief 13-hour skin maceration before gentle pressing. Fermentation occurs spontaneously with indigenous yeasts in concrete tanks. The wine ages for six months on fine lees in concrete vats followed by three months in bottle, and is bottled unfined and unfiltered with minimal added sulfur.
