## About this wine

Les Valseuses is a micro-négociant project founded in Arbois by Loire native Antoine Le Court-Chedevergne and his partner Julia Naar. Operating out of an 18th-century cellar in Les Planches-près-Arbois in Jura, they craft low-intervention wines from organically farmed grapes. Sinnerman is crafted from Carignan grown in the sun-drenched Lubéron region and brought back to Jura. In line with the winery's tradition, this cuvée takes its name from the musical masterpiece made famous by Nina Simone.

## Interesting facts

- Named in honor of the iconic song 'Sinnerman' made famous by Nina Simone.
- Carignan grapes harvested in southern Lubéron are transported to Jura for a 10-month infusion.
- Made with 100% whole-cluster infusion without punch-downs or pumping over.
- Bottled by hand completely unfined, unfiltered, and with zero added sulfites.

## Food pairing

The vibrant acidity, fine-grained grippy tannins, and savory herbal core of this low-intervention Carignan enable it to cut through rich, fatty meats such as lamb, pork, and duck while seamlessly pairing with earthy roasted vegetables and dried herbs.

## Wine making process

Hand-harvested Carignan grapes from organically and biodynamically farmed old vines in Lubéron undergo a gentle 10-month whole-cluster infusion in fiberglass tanks. Winemaking is non-interventional with zero punch-downs or pumping over, allowing spontaneous fermentation driven by wild yeasts. The wine ages in fiberglass tanks before a single racking and is bottled by hand unfined, unfiltered, and without any added sulfites.
