## About this wine

Bodegas Ca'n Vidalet was established in 1996 in northern Mallorca, situated at the foothills of the UNESCO World Heritage Serra de Tramuntana near Pollença. The estate is dedicated to preserving local viticultural heritage through organic farming on calcareous limestone soils rich in ancient marine fossils. So del Xiprer translates from Catalan as the Sound of the Cypress, named in honor of the majestic cypress trees framing the estate vineyards. The wine creates a harmonious bridge between Mallorca's indigenous identity and noble international grape varieties.

## Interesting facts

- So del Xiprer translates from Catalan as Sound of the Cypress, named after the protective cypress trees surrounding the vineyards.
- The winery aging cellar is built directly inside a subterranean natural limestone hill, providing ideal year-round aging conditions.
- The wine pairs native Mallorcan Callet grapes with classic French noble varieties like Merlot, Syrah, and Cabernet Sauvignon.

## Food pairing

The medium-plus structure, vibrant Mediterranean acidity, and refined oak tannins of this Mallorcan red require dishes with rich protein and savory depth. Extended barrel maturation allows it to pair seamlessly with roasted meats and aged local cheeses, while native acidity easily cuts through rich fats.

## Wine making process

Organically grown grapes are harvested by hand and rigorously sorted prior to temperature-controlled fermentation in small tanks to preserve freshness. The wine undergoes maturation for 19 months in French oak barrels of 225L and 500L capacities, utilizing a combination of first, second, and third-use oak. Bottled at the estate, it rests and matures further in a subterranean natural stone cellar constructed beneath a limestone hill to ensure ideal aging conditions.
